Avocado Cilantro Lime Dressing

This Avocado Cilantro Lime Sauce is creamy, rich, and indulgent, perfect for adding a zesty kick to any dish. Easy to make with just a few ingredients!

Ingredients

  • 1 medium avocado (make sure it's ripe)
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice (fresh is best)
  • 1 teaspoon minced garlic
  • ¼ cup vegan yogurt (sub mayo)
  • ½ cup fresh cilantro, stems removed
  • ¼ cup fresh basil
  • Salt & Pepper to taste See notes

Instructions

  • Cut the avocado in half and remove the pit. Spoon out the flesh into a blender.
    An avocado has been sliced in half, revealing the pit in side. The two halves are laying side-by-side.
  • Add all of the remaining ingredients. Blend until you achieve the desired texture (I like leaving the texture of the cilantro throughout).
  • Season with salt and pepper (see notes for salt-free options). If you prefer a thinner texture, add a tablespoon of cold water and process again until smooth.
  • Transfer to a lidded glass jar and refrigerate. It will keep in the fridge for up to 4 days. You can freeze this dressing in freezer-safe containers for up to 2 months.

Notes

Make this a tasty low-sodium dressing. Here are some low-sodium seasoning ideas for added flavor:
  • Mrs. Dash Italian blend can add zesty flavor
  • A sprinkle of NoSalt can add a salty flavor without sodium
  • Some studies indicate that the sodium in miso paste is healthier than salt. You can add up to a teaspoon of mild miso paste to create a saltier dressing.
  • Add more lemon juice. Believe it or not, lemon juice has a salty flavor to it. So add a bit more lemon juice if you'd like this dressing to taste saltier.

Herbs

Need some cilantro alternatives: Here are some to consider: 
  • Parsley (not everyone loves cilantro, so substitute fresh parsley)
  • Cumin — Add up to 1/2 teaspoon of ground cumin for a flavor boost.
  • Watercress — Yes, this is not a herb, but it's a nice green, so it will add lots of nutrition, green color, and some mild flavor.
