These Chocolate Peanut Butter Rice Cakes are the ultimate solution for when you need a dessert that has an opinion. Line a baking sheet or plate with parchment paper (for easy cleanup and transfer).
Combine peanut butter and protein powder in a small bowl. Spread 1-2 tablespoons of peanut butter mixture evenly over the top of each rice cake. Go edge-to-edge for maximum coverage—thicker layer if you love PB!
4 rice cakes, ⅓ cup peanut butter, 1 tablespoon vanilla protein powder
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-30 second bursts, stirring well between each, until fully melted and smooth. (Alternatively, melt over a double boiler on the stove.)
