Using a can of chilled coconut milk (see notes), scoop out one cup of coconut cream into a pyrex measuring dish or another microwave-safe dish. Heat in 30-second increments until it's hot, but not boiling.
Pour the chocolate chips into a heat-proof bowl.
Pour the heated coconut milk over the chocolate. Use a spatula to press down any chocolate that is not under the surface of the milk. Cover, and set aside for 5 minutes.
Whisk the chocolate mixture until glossy and smooth. Learn more about Vegan Chocolate Ganache.
Let the chocolate mixture sit at room temperature for an hour or refrigerate the ganache for about 30 minutes.
Transfer to a mixing bowl and add salt and vanilla. Using a whisk attachment on a stand mixer or an electric mixer, mix on medium speed to incorporate the ingredients. Scrape down the sides of the bowl. Then turn the mixer to high and whip for around 1 to 2 minutes. The ganache will get lighter in color and will become fluffy.
Spread it over your favorite cakes, or add to a piping bag fitted with a 1M star tip to make decorative toppings to cupcakes. It's also a great filling to add between layers of a layer cake.
Notes
The nutritional estimates are based on portioning the frosting into 12 servings.To make the fat in a can of coconut milk scoopable, refrigerate the can overnight. When you open the can, the fat will be mostly solid. Use a metal spoon to scoop it into a measuring cup, measuring out around 1 cup. You can add up to 2 tablespoons of the watery coconut mixture from the can. Use the remaining coconut water in smoothies or other baking dishes.
